Ingredients

Steps

  1. Preheat oven to 200°C (400°F). Pat salmon dry, season with salt and pepper.
  2. Heat olive oil in an oven-safe pan over medium-high heat. Sear salmon skin-side up for 3 minutes.
  3. Flip and transfer the pan to the oven. Bake 6-8 minutes until just cooked through.
  4. While the salmon cooks, whisk together lemon juice, a splash of olive oil, oregano, salt and pepper for the dressing.
  5. Assemble the greens, tomatoes, olives, cucumber and onion in a bowl. Top with the salmon and dressing, and feta if using.

Why this scores well on THE FAD: Salmon is one of the richest common omega-3 sources, olive oil supports a favourable fat profile, and the vegetable-heavy bowl brings fibre and plant diversity — this is close to a textbook Mediterranean-style meal.
