Why it's on this list

Bell peppers — especially red ones — are a strong source of vitamin C, often exceeding citrus fruit per serving, along with carotenoid antioxidants that give them their colour.

How to use it

Red, orange and yellow peppers carry more antioxidant pigments than green peppers, which are simply less ripe.
